“Entrepreneur Fred Harvey, dismayed by the often-crude facilities he had seen at railway stops, saw a business opportunity, Harvey struck a deal with the Atchison, Topeka & Santa Fe Railway to operate a system of eateries along its rail lines. His first depot restaurant opened in Topeka, Kansas, in 1876. Within two years, he’d opened his first hotel/restaurant in Florence, Kansas. The foundation for what would grow into a hospitality empire was laid. By 1891, 15 Harvey House restaurants were in operation. Harvey not only created America’s first restaurant chain, but he was also a pioneer of cultural tourism.

The waitresses? The famous Harvey Girls who defined hospitality and brought culture and etiquette to the wild west.

Not part of this Saturday’s tour but certainly worth exploring are two other sites: Fort Selden Historic Site and the Leasburg Dam. “The fort was established in an effort to bring peace to the south-central region of New Mexico. Housing units of the U.S. Infantry and Cavalry, the intent was to protect settlers and travelers in the Mesilla Valley from desperados and Apache Indians. Several of the units stationed at the fort were black troopers, referred to as Buffalo Soldiers.” You can visit a monument to the Buffalo Soldiers at Concordia Cemetery in El Paso where as many as 40 Buffalo Solders are buried.

Leasburg Dam State Park features the Leasburg Dam constructed in 1908 to divert water from the Rio Grande into a system of canals for use by local farms. From about mid-March to mid-October the park is also a venue for fishing, canoeing, and kayaking in the Rio Grande.
